Chicken Parmesan
Friday night I decided to make an easy, yummy dinner. I wanted some warm comfort food and asked around the office for ideas. A friend told me about an easy recipe for chicken parmesan that I decided to try. And it really was easy and yummy!
Ingredients:
Chicken breast (1 per person)
Egg
Bread crumbs
Olive oil
Marinara sauce
Parmesan cheese
Pasta
Directions:
1. Wash the chicken. Then pound the chicken until it is about 1/4" thin. I placed the chicken on a plastic cutting board and covered it with plastic wrap, then pounded it with a tenderizer for a few minutes.
2. Dip the chicken in egg wash until it is covered.
3. Cover the chicken with bread crumbs.
4. Cook the chicken in olive oil on the stove in a pan over low heat. It should take about 7 minutes on each side to cook through fully.
5. Heat the pasta sauce on the stove top.
6. Preheat the oven to 350. Cover the chicken in sauce and sprinkle parmesan cheese on the top. Bake the chicken for about 15 minutes, until the cheese is melted.
7. Serve with pasta! Enjoy!

A Quick Mini-Makeover!
Have any of you heard of Hobby Lobby? It is a ridiculously large arts and crafts store! I found one last week when I went to visit Maggie. Let's just say I plan on going back when I have much more time to spend and a list of projects that I want to work on or time to let myself roam around and be inspired. They have everything there. I mean it.
I took a quick browse through the store to see what it was all about. I found a section dedicated completely to knobs. They had every type of knob you could imagine and super cheap! I decided to buy 6 that I thought would look nice on a chest of drawers that my mom painted for me a number of years ago. This was a cheap way to spruce up this special piece of furniture. Spinach Feta Turkey Burgers
For my mom's birthday she asked for a simple, healthy, and delicious meal! So I went on Pinterest (like I always do when I am looking for a new meal or inspiration!) and found a recipe for spinach feta turkey burgers. I paired the burgers with homemade sweet potato fries and honey mustard (recipe here)!
Spinach Feta Turkey Burgers
Ingredients:
1 lb ground turkey
1 cup old fashioned oats
2 large egg whites
10 oz frozen spinach
1/2 cup feta cheese
Directions:
1. Defrost the spinach.
2. Combine all ingredients in a bowl. Mix until blended.
3. Form into 8 patties.
4. Grill until cooked through.
5. Enjoy!

8 servings; serving size 1 patty
135 calories; 3g fat; 2g fiber; 1g sugar; 9g carbs; 19g protein

Sweet Potato Fries
Ingredients:
Sweet potatoes (I used 4 large potatoes, for 5 people)
Olive oil
Garlic salt
Pepper
Directions:
1. Wash and peel the sweet potatoes.
2. Cut the potatoes into long, thin slices (in the shape of fries). The thinner you cut, the crispier they get!
3. Let slices soak in a large bowl of hot water for at least an hour.
4. Preheat the oven to 375.
5. Place the potatoes on a baking sheet lined with tin foil. Top the potatoes with olive oil.
6. Bake the potatoes for 30 minutes, flipping them over after 15.
7. Top the fries with garlic salt and pepper.
8. Enjoy!
Honey Mustard
My sister made honey mustard to dip the fries in and it was delicious! She mixed honey and mustard well to taste! It was easy and I recommend it to pair with the sweet potato fries!
